At CPC we are proud of our commitment to sourcing 100% of our ingredients from Vancouver Island. Everything! We are equally proud that we do not add anything unnecessary to produce a great ravioli.
Our commitment to local supports local farmers and fishermen. Just as important is it puts us in charge of our Food Security. We choose to offer our pasta in ravioli. It is the best way to use a broad spectrum of meat, seafood and produce from our great island.
We start with locally grown wheat. It is milled locally at True Grain Mill in Cowichan Bay. We choose a grind that still maintains more of the fibre portion of the wheat than over processed grains. To it we mix in local free range eggs. The result is a rich dark pasta. We form it into ravioli which we stuff with different seasonal recipes.
Why are our raviolis frozen? This ensures that you enjoy the same quality as the day that they are made. With frozen pasta, you don't have to worry about how long they have been sitting out on the grocery store shelve. Trust us, these will not be in your freezer for long!
